Objective
The objective of the project is to develop novel foods containing insect protein that offer significantly enhanced quality, sustainability and competitiveness compared to competing products. The project partners have identified insects of the genus Hermetia illucens as a promising beneficial insect and alternative source of protein for the food sector following preliminary investigations. The project's objective is to lay the foundations for the development of novel insect foods and their successful market launch.
The following key areas of work have been defined for the project:
- Development of innovative insect foods and the adaptation of protein processing to the requirements of the food industry
The first research focus comprises the further development of special processes for insect protein processing and thus the development of tasty, protein-rich foods. This also includes evaluating product quality and increasing consumer acceptance.
- Approaches to improving the sustainability and competitiveness of insect food
The second research focus is aimed at reducing production costs and increasing the sustainability of the production process. This research area will consider the use of cost-effective agricultural by-products and residues as well as by-products as feed materials for insect production. The focus is on feed materials that do not compete with conventional animal feed and food and are produced regionally.
- Reducing production costs and consumer prices for insect protein
The third research focus area is concerned with innovative technological methods of process and control automation in insect production with regard to two aspects. Firstly, the objective is to enhance the competitiveness of food products through an efficient and cost-effective production process. Secondly, a targeted improvement in product properties such as nutritional and physiological value, sensory properties and food quality and safety.
